My side Carburetor kit

I just bought a new motor for my sammy, it has a performance cam, Thorley headers, high compression pistons and has been bored .20 over.  It came with a Harly Carb, but it was mounted with a home made adaptor plate.  I had a Weber that I had just bought 2 months ago, that looked better than the homemade job, and was new, so i chose to use it.  The Weber seems to not be giving me enough fuel.  I think it is going to have to be rejeted.  So now what to do, I have emailed the guys at low range for prices of jets, to rejet, but am considering putting the Harley Carb on instead.  Is there a source to buy just the adaptor kit from the manifold to the Harley carb?  I cant even find the complete My side kits offered anywhere.  I am tempted to just tinker with cleaning up the Home made job, but it does not have any place for the antifreeze to hook up to assist in I guess keeping things warm.  I live in Texas not even sure if i need that.  I would like to find a source to buy the adaptor plate, so it all looks cool.  Like i said I have the carb, the Breather, the choke cable, just looking for some advice from someone running the myside kit, or a source for that part

If its going to get cold at all then I would avoid the unheated manifold as they are prone to carb icing.
