Needing To Get Tires for My 2006 Zuki XL-7

So, like the subject says I need to get a new set of tire for my Zuki, and could use your advice.

I currently have a set of KUHMO Solus P235/60 R16 on Zuki.  These were actually put on new as part of the buy at the dealership 4 yrs ago, and have been a pretty good tire.  I have not done anything like a lift increase but I am trying to find a good tire and tire size that will give a little more clearance and wont screw up my gas mileage too much.  I was thinking something like an all terrain, all weather, for the occasional snow, ice and summer time off-roading in desert scrub.
 
I saw an 04-05 model with a set a Dunlop Rovers that looked awesome (did not get the size though), but their website did not offer anything close to it.  Can y'all give me some good recommendations that won't break the bank.  I still have a few months before I buy and I need to start saving for this.

Maybe if we change up the subject a little.  What size tires is everybody running on their Zuki XL-7 4WD's?

I read 225/75 will fit stock heights with minimal rub on full lock. TRUE?
