hey i got the 3 supsension set up and in the beggining it was big then the coils settled, could i install spacers as well, or will it over extend the shocks and struts?

You could probably space it up to sit at the original 3" height.  Too much more, and you'll probably be a little over extended on the shocks.

Usually they start off way above 3" and settle down to 3"

Measure how much it has settled, then add spring spacers of that height to bring it back up tp 3 inches of lift.
