Sounds like you might have a bad ground...

Is it as instant as throwing a light switch, or "progressive". How quickly does the temp change?

Could be an old hard fan belt and it is slipping.

I know this may sound Hokey.....but my sammy spit all of the catalyst out of the catalytic converter into the muffler.  It didn't totally stop it up, but the temp gauge went up dramatically and you could kill the sammy by holding your hand over the exhaust pipe.  I straight piped it, removing the muffler but leaving the Cat shell.  It now has a mean growl and runs as cool as a summer breeze....

x2

Seems to be related to electrical draw somehow (more draw = engine working harder), and this is the most logical place to start. Is the belt old, or is it loose? Unfortunately, this is a strange problem and I've never heard of it. For all I know - something in your cooling system is close-to-failing, and when your engine works harder (to push the alt when there's more electrical draw) it's overwhelmed. Hate to say I'm just speculating, and don't have a better answer for you  :'(
