Title: Weber carb ???

I am looking at a Weber 32/36 carb for my 87 Sammy. My question is which choke setup (E, manual, or H2O) should I go with?

I went with the water choke and I'm not happy with it. Had (still have) issues with it sticking. I'll probably get a manual choke conversion for it. Other than that, it was fine.

H2O choke - Easiest installation
Electric - you need to re-plumb the water connections and run a wire to the choke.
Manual - you still have to re-route the plumbing and then install the choke cable.

Oh - the carb kit comes with a bunch of plugs for the vacuum ports - I still had to go find some others..

If you're going to go with a Weber conversion definitely get the electric choke. It's an easy install and works real well. Make sure you get the 'off-road' model Weber. What they've done now is re-route the float bowl so that it vents into the charcoal canister now and so the hi angle wheeling doesn't effect it as much as it use to. Also get a fuel regulator and set it at 1.5lbs

I bought a box of Samurai parts off Ebay for 150.00 and was surprised what I found in it. 2 8v tbi complete. So now I have tbi plus a complete extra one and the new weber on old manifold in my shed. Only thing extra I had to get was the harnes made up. Runs better than it ever did with the carb on it,and gets 27mpg now.
