Title: Smoking samurai

Just had my 1.3 head rebuilt and after installing it, the thing started smoking bad (oil smoke... not white). Never smoked before. Any thoughts?

Did you double check the head gasket before putting it on?  If you put it on the wrong way you can block off some oil channels.  All though that usually just causes the engine to blow up...

UPDATE:  I have noticed that the thing doesn't start to smoke until the thermostat opens which leads me to believe that maybe it is water... not oil. Any thoughts???

Possibly, but you should be able to see some water in your oil.  You might try a leak down test and check your compression.
