Does anybody know what the recommended rating of a thermostat for a 93 tracker?

If I remember correctly its 185F over 5C and 180F below 5C. Er, yeah, I'm British we tend to mix our units :)

88c =190.4F or 92c=190.6F either one

From my FSM:
Thermostat 'A' opens at 82C(179F), fully open at 88C(190F)
Thermostat 'B' opens at 95C(203F), fully open at 100C(212F)

Are you sure you are reading that right?
My info says....
Tstat A....starts to open at 179*F and fully open at 203*F.
Tstat B....starts to open at 190*F and fully open at 212*F.

On a 96 stock it's 82 C (179 F) and 95 C (203 F) according to the FSM, so Sky wins! :)

I run the 192F one as my Tracker used to run a little cold.

Ah yes you're correct, I read that wrong .
