what do people use for fixing mounts and brackets to A/B/C pillars?
i was thinking of using pop rivets, but not sure if these will hold up.
i cant get to the inside of the pillar, so a nut and bolt is not really an option.
self drilling screws aren't my favourite, as they can get loose or pull out of the hole.

P.S, i'm looking for ways to mount a light bar cheaply, as a roof rack (one, single) is $289 AUD.

That sounds like the price for a pair of roof racks to me, is that price from the Rhino site? Anyway stainless steel rivets should do the job but you need a decent rivet gun or you might not be able to pop them.

The Safari snorkel uses clip in nylon inserts. Use 2 pairs of 2 spaced a reasonable distance apart on each pillar and it should be more than strong enough. Pic below is the best I have.

If yours is a convertible the you could consider a bracket across the top front frame mount. Sorry about the quality of the pic. It needs lightening up to bring out the detail

Use Nutserts!
They are like a rivet but have threads in them. They are very strong. I used them to hold rock sliders on a Jeep I used to own.

Nutserts are great but you will also need the tool to fit them. See if you can borrow one with the right size.

It possible to improvise a tool you want something like a tap holder with a bolt though a nylon bush,it works fine with some of the lighter nuts.

You want to use the nutserts that these guys are talking about, go down to a local sheet metal shop and ask if then have the tool to fit them and if they'd do can the fit them for you save ya buying the tool (which is about NZ$70 over here. You can get different sized threads and sealed versions too which are handy when going thru the roof.
I use them for holding my roof rack down, snorkel to A pillar, 2nd battery tray to inner guard etc etc ..
BTW they are also called rivnuts down under "Phardinkim" ;D
