I'd liek to know also, will any 31" fit on the stock tracker wheels? I'm thinking about using it for a spare on my sammy.

It would probably fit but the stock Zuk rim is really far to narrow for a 10.5" tyre. Usually the manufacturers recommend at least an 8" rim for a 10.5" tyre. The stock Zuk is only 5.5". I have a BFG fitment guide on my site under Tech Info

Will it fit?

Yes.

Will it work?

Yes.

Is it recommended by the tire manufacturors?

No.

A better choice would be some 7" or so wide rims but eh, if this is all you have it will work for a while.  Keep in mind the 31's will definately rub something with that much backspacing and the air pressure you'd need to run would be low...but still perfectly suitable for a light weight rig like a Suzuki.

Yes 31x10.50's do fit on the stock rims but front tires rub the frame at full lock and as the rear flexes they rub on the top inside of the wheel well. That is what I'm running now, been slowly building on a budget so new wheel rims come later.
