Ideas on carb issues

Ok, if you see my other posts you will see that a while back I got my sammy in a huge mudhole, there was no water or dirt in the airbox or carb throat.  The computer box had dirt on it, and the water could have been that high, but I took the actual board out of the plastic box and its clean, like brand new, so Im SURE it didnt get wet.

I had a problem with it idling very high, took it to a carb guy and he cleaned it and reinstalled it, ran fine, then after a hour trip on the interstate it started bogging down unless you kept the revvs up, got to a exit and it died. after leaving it over night, it started up and ran fine.  Friday I hopped in and took it down the interstate and the same problem happened, when you start it, it will idle, if you even breath on the gas pedal, it dies, you have to tap it really fast to get the revs up then slip the clutch and keep the revs up or it will die.  Once again, after sitting in a parking lot for about 40 minutes, it started up and drove fine for 30 minutes.  I have to drive back home, and I know it will do it again.  Does anyone have any idea wtf is the issue?

I ran HEET through the tank, and have put two new tanks of gas in it.  IM LOST PLEASE HELP.
