I have an 87 Sammy, and live in an area with no smog inspection requirements, and would like to remove all traces of the smog control system; ECU, EGR, catalytic converter, everything connected to the carburetor, fuel system, etc. Can I do this, and if so, how, in what order ? It's only used in the desert, offroad.

Unfortunately, the Hitachi carburetor is pretty much designed from the inside out to deal with emissions.

If you remove vacuum lines, it runs like crap.  If you disconnect electrics, it runs like crap.  Heck, if you don't keep it properly maintained, it runs like crap!

A better choice for removing the smog stuff would be a different carburetor setup entirely.

The current favorite along these lines is Zuk's Offroad's MY-Side system.  Look at the bottom of this page:

I would say that to gain 1-2hp vs. all the nox and co2 you are dumping in the atmosphere is not much of a benefit.  I am not exactly a tree hugger, but I do prefer forests over toxic waste.
In the early 70's smog equipment really cut back power, today that is just not the story.

Your big limiting factors are the small carb, and the restrictive exhaust. Upgrade to a larger junk yard carb (cheap) that looks simple (no electronics, minimal vacuum lines), and go with a 2 - 2 1/4" exhaust. And, please use a high-flow CAT. It won't rob you of much power at all, and goes a LONG way to keeping the environment around for future generations.
